To this day, I have people who ask me if we’re open for dinner. What?! You’re kidding right? We’ve always been open for dinner. So this salad, as well as the Gaucho and Sautéed Salmon, is aimed at making sure my guests know that we have “dinner” salads. The Yellowfin Tuna is seared to order and comes on a big mound of goodies. The fresh-cut avocado, crunchy wasabi peas and wontons, along with the kick from the wasabi cream scream “dinner” in my mind.
