Pappa al Pomodoro (Bread & Tomato Soup)

My version of the classic Italian soup, I used a bunch of garlic, olive oil, basil, and chicken stock for the base and then thicken the soup with day-old bread (just like they do in Tuscany).  Before serving we grate a little parmesan cheese over the top.
